Rhode Island has been winning national accolades for its restaurants, which serve cuisine from every part of the world. You can still find regional fare such as johnnycakes, a corn cake - like affair cooked on a griddle, and the native clam, the quahog (pronounced "ko-hog"), which is served stuffed, fried, and in chowder. "Shore dinners" consist of clam chowder, steamed soft-shell clams, clam cakes, sausage, corn on the cob, lobster, watermelon, and Indian pudding (a steamed pudding made with cornmeal and molasses). Providence's Federal Hill neighborhood holds superlative Italian restaurants, and dozens of other restaurants in the city rank among New England's finest eateries.
