Though it's now a certifiable mini-empire with locations throughout Seattle and in other cities, Caffé Vita's roasting operations, and indeed its heart and soul, are located right in Capitol Hill's Pike-Pine Corridor. The super-savvy owner also owns Via Tribunali pizzeria and several other local hot spots—and there's no doubt he knows how to tap into the gritty Seattle energy. This flagship branch—with its friendly, tattooed baristas; local artwork; dog-walking regulars; and laptop-toting freelance crowd sipping Americanos—has everything a Seattle coffee shop should, including dynamite coffee (roasted on-site; take a peek through the doors in the back), pastries, and savory offerings that include Italian piadina flatbread from nearby La Spiga.
