It probably hasn't changed much for the last 100 years or so. Dark wood and politely aloof waiters set the stage; good coffee, tragos (alcoholic drinks), sangria, and snacks complete the scene. On nice days you can sit out on Plaza Dorrego and take in one of San Telmo's most classic hubs of activity, most lively during the Sunday festival.
