The restaurants in this mini-chain beat the competition with an ever-present atmosphere of young, cutting-edge luxury. If there's a wait for a table in the dim, lively room -- and there often is -- you can expect to be served an aperitif while you wait. Sushi menus don't vary much in this city, and these joints are no exception; choose from dozens of variations on salmon, which is what they do best. The two Las Cañitas branches are strangely right near each other; the third is in Puerto Madero.
