Las Hayas is in the wooded foothills of the Andes, overlooking the town and channel below; ask for a canal view and, since the rooms are all decorated differently and idiosyncratically, sample a variety before settling in. All feature Portuguese linens, solid oak furnishings, and the Las Hayas trademark: crisp white fabric-padded walls, covered in bright one-color floral prints. A suspended glass bridge connects the hotel to a spectacular health spa, which includes a heated pool, Jacuzzi, and even a squash court. The wonderful five-star restaurant Le Martial prepares an excellent version of mollejas de cordero (lamb sweetbreads) with scallops, and boasts the best wine list in town. Frequent shuttle buses take you into town.
