Hong Kong is very easy to navigate on your own. Why would you want/need a tour? Choose the things you want to see/do, spend as much time as you want, use the great public transport.

Are you visiting elsewhere in mainland China? If you are from the US, a visa to China is $140 and it must be obtained in advance. You do not need a visa for Hong Kong or Macau. If you wanted to go to Beijing from Hong Kong, you can buy tickets in Hong Kong. I'm sure you could arrange a group tour if you want to travel with a group. But there are problems with group tours and no reason you can't travel independently.

There is plenty to see and do in Hong Kong to fill much more than 3 days.

If you want a day away from Hong Kong you can take a day trip to Macau.

Thank you so much! Can you tell we have never done this before! My son and Husband will meet in HK and then go to Bejing. My husband wants to see the great wall and the Imperial City. Where would they buy tickets in HK? at the airport or hotel? thanks

They should have their visas in advance and then they can buy tickets in Hong Kong at a travel agent. I recommend getting a guide book (there are many, so browse for the one that they like best) to prepare for the trip.
