Food in Montreal

Food in Montreal
Hello!
My friend and I will be visiting Montreal for the first time in mid-march.
We have been researching what to do and what to eat.
We are pretty much set on activities and food to try out (poutine, smoked meat sandwich, etc), being very tourists-y.
However, as Montreal has sooooo many great restaurants(especially French), we are having trouble picking one really really good restaurant. My friend recommended Joe Beef, but they are booked fully during our visit. (their lobster pasta and fried chicken with fois gras look really interesting)
We live in NYC so we are exposed to many different kinds of cultures/food on a daily basis. We have been to some great restaurants in NYC from time to time. Although NYC offers many variety, I do not believe it offers the best of each.
So please, share with me. Where have you gone to eat in Montreal, that you can honestly say,
"I want to go back to Montreal to have that food!"
or "Wow I have never seen this before! "

I think you should try Toqué. Norman Laprise is one of the best and most creative chefs in Montreal, if not the country.

Montreal takes dining out very seriously, including the local newspapers which devote big space to reviews. The Montreal Gazette, the English-speaking daily, archives its critic, Lesley Chesterman, who is picky and long-winded and really knows the scene. http://montrealgazette.com/author/lchesterman

Quebec allows bring-your-own-wine dining. The places that practice this money-saving tactic tend to be small bistrots with potentially interesting specialties. The symbol is AVV, for apportez votre vin. One reliable example is Le Quartier General in the Plateau www.lequartiergeneral.ca Reservations advised.

In addition to Joe Beef, our recommendation would be Comptoir Charcuterie et Vins. We had a wonderful meal there - tremendously joyful servers and chefs (the cooking is done in an open kitchen right behind the bar) serving interesting and tasty dishes at a reasonable price.

Thank you guys soo much for suggestions. We have successfully made a reservation at Toque for a lovely dinner, I have been checking Gazette every day at this point for any interesting news. I will also check out Comptoir Charcuterie et Vins as their menu looks really amazing!
