Celebrity Summit or RCCL for family cruise
We are choosing a last minute cruise for family (parents, 14 and 12 yr old). We have a res on fully booked Royal Caribbean Adventure for adjoining rooms. Our travel agent suggested Celebrity - where we can upgrade to a suite for more space but I am concerned about activity level.
I like both itineraries - am just concerned about travelling on a fully booked cruise.
Am I crazy?

I don't think you're crazy. I'll be going on the Celebrity Summit for Bermuda at the end of April. The cruising industry always tries to book a full load or try to suggest something higher than planned.
My advice is do research and see which cruiseline meets your needs. I like the virtual tours on the cruise websites to see the inside of your ship. If you are on a waiting list or on a deadline, try the other cruise to see if there are any openings for your needs.

Almost all cruises are fully booked, so that alone wouldn't worry me. The real question is now OVER booked a cruise is. The lines prefer 110%, but if it's 120% then the ship can really feel packed, especially when you consider that there may be 600 to 800 children aboard. (The way a cruise books at over 100% is when a child or another adult stays in the same cabin as two adults, hence the overbooking.)
Nevertheless, I'd go with the Royal Caribbean cruise because it tends to be more family-friendly, though the opportunity to upgrade to a suite is tempting, and I don't think you'd be disappointed if you did that.
Adventure of the Seas is an older ship; you don't say which Celebrity ship you'd move to. That could be the deciding factor.

RCCL over celebrity with the kids, especailly at 12 & 14.
If you ditch the kids, I'll pick Celebrity over RCCL everytime.
RCCL owns Celebrity anyway so the money ends up in the same pockets anyway.

You will find that lot of cruises during kids holidays will sell out fast. I always Celebrity might be a bit more upmarket and not sure how welcoming they are for kids. Have you ever thought of princess as they have some great kids facilities check this link out it give you list of all the kids facilities.

I've sailed both the Summit and Royal Caribbean with my family. We have 3 kids ages 15, 12 and 9. By far go with Royal Caribbean. Best kids program at sea. This video gives you some info on Adventure of the Seas. http://www.cruisenow.com/Royal-Carib...re-Of-The-Seas
