i think your trip sounds fine. if you like architecture you certainly will find valencia interesting also.. the new science center is an impressive complex.. especially attractive at night with its illuminated artifical lakes.
since you can easily fly the longer routes, (can you believe those vueling prices??) you can get alot in.
the euromed does follow the coastline in a few places.. mostly more attractive from an hour outside of valencia on north, but it is not a BREATHtaking trip.. just pleasant. if you can, go first class with all the benefits it brings..
there are nice parts with rocky coastline, but much of the coast is flat and uninteresting as far as i am concerned.
hope you can secure some nice hotel reservations those conflictive first days/week asap. so much of the country will be taking another mini-vacation.
