Yes you take a train from Muenchen to Bamberg.

It takes 2 to 2.5 hours by ICE.
Local trains take 3.5 to 4.5 hours. (Select "local transportation" where it says "standard search".)
If you take local transportation, you can go by Bayern-Ticket for 25 euros for groups up to 5.

Definitely worth staying at least overnight. We've been there twice. It has a famous rococo painted bridge, nice setting, lots of outdoor cafes, small shops, cobble stone streets. There is a two story Inn (with a cafe restaurant below) right next to the bridge. That would be an ideal place to stay, unfortunately I can't remember the name. Hopefully other Fodorites know.
