The planes from BCN to Nice are very expensive (seriously, I found no budget stuff even months before my travel date), but you can certainly train it up and back. I would not take a bus just because there are some iffy highways on that route and they are slower than the trains.
Warning: make sure you check on your ticket which BCN train station you leave from. Some international trains leave from Estacio de Franca, which is quite far from the main station called Barcelona Sants. Do not miss your train on a technicality.

Also. . . on the renfe.es website, Nice (in spanish, Niza) is not an option, so you might need to do Montpellier as a destination, then find the French website and do Montpellier to Nice.

You should check with your transatlantic carrier. Many of them offer programs ( American has its ONEWORLD program) that enable you to tack on intra-European flights for a very reduced charge. Using the ONEWORLD program last year, we were able to fly Barcelona-Nice on Air Littoral for only $150. WIthout the program, I received a quote of about $600!
