My husband & I are visiting friends who are stationed in Baumholder. This is our first trip to Europe!
We want to do some day trips during the week (mid-March) while they are at work. Could you please recommend some places to visit that aren't any farther than 2-3 hours away and the must see there?
We'll be renting a car - will it be better to take the train to any of your suggested day trips?

We did this when our son-in-law was stationed there about ten years ago. He and our daughter both took some time off and took us places, so we didn't drive ourselves. Had planned to, but the foreign language signs and the speed on the autobahn from the airport really bluffed my husband.
Some close places we saw were Kryburg Castle in Kirn and the Felsenkirche (Cliff Church) and castle ruin in Idar-Oberstein.
Further afield, we stopped in Baden-Baden on the way for a weekend in Montreux, Switzerland. (We spent the night in Leysin because a hotel told me they had a deal just three miles away from Montreux; and so it was, but it was three miles straight up a mountain.)
We also went to Heidelburg and Rothenburg and spent a night in Garmish on the way to Innsbruck. Got lost on the way back and arrived in Fussen too late to see Neuschwanstein Castle.
We spent two weeks visiting with them and playing with the grandchildren and then took a train to Paris for a long weekend before flying home. It was a great trip.
