I've flown easyjet many times now, and they are my first choice for a cheap airline.
The best deals are booked well in advance, often prices can change in less than an hour, so if you see a good price go for it! Taxes are added, but they are much more reasonable than other airlines. I have never had to pay much more than £20 for a return trip in taxes (with other budget airlines I have noticed the taxes being as much as £70 each way on popular routes).
When in April I found I had to take a wheelchair on flights to and from Venice, and needed assistance at the airport for a passenger, they were most helpful.
It's quite true that if you leave checking in to the last minute you get caught up in the cattle rush to board, but I've never been on a flight that was full, and I never mind having a couple of hours' peace sitting alone to read anyway! Take along a snack if you think you might need it, and soft drinks, but 25cl bottles of wine don't seem to be particularly expensive to buy on board.
I flew to Barcelona with an almost empty suitcase, and came back with it full (shopping with teenage daughters!) but they weighed the big case and 2 small cases together and allocated the weight between us so it wasn't a problem. (We had the same thing happen when we flew with Ryanair.)
Din't worry about the low fares, take advantage of them!

I've flown most of the budget airlines in Europe, including EasyJet and RyanAir and found them to be great! There weren't any frills, but the flights can be incredibly cheap and I arrived on time or ahead of time every time.
Honestly, I think they even surpassed the American "regular" airlines for friendliness of staff!
And I only order online, I never had a single paper ticket from them and didn't have any problems. Which is again more than I can say for many of my experiences with both European and American traditional airlines.
