That is a REALLY broad question. People need more information to help, such as:
- What are the two of you interested in (history, fashion, art...)?
- Have you been to Europe before?
- What other places do you enjoy?
- probably other questions I'm not thinking of.
Right now you could get a lot of "Paris!" "No, Rome!" "No, London!", but you might hate all of those because really you'd be most interested in Barcelona. But we have no way of knowing that.
That said, in January I'd go south, to Rome or Spain, unless you love or can ignore cold weather.

Well, a little more info would help.
Where are you coming from?
What type of weather are you looking for?
What are your interests/what activities do you like? (Skiing? Shopping, Basic tourism? Clog dancing???)

In January, I would want a location where I was guaranteed lots of warm, indoor activities. Some places in Southern Europe are so used to enjoying moderate weather that if they get a cold snap, they don't have a lot of heating capacity, and much of the life of the place is about being outdoors.
I would also like a city with lots of lights at night. Lots of sparkle. Daylight hours in Europe are quite short in January. It can be very cheering to have lit up store windows, etc. at 5pm.
But I also would want core attractions that interested me, and I agree with the advice that if the two of your are interested in theater, or music, or painting, or beautiful architecture -- or have always wanted to see fill-in-the-blank, you should give that the priority. You can always dress warmly.

We would need lots more information from you. Europe is an entire continent, with a bazillion cities, each one distinct from the next in many aspects.

thanks everyone--we're going for some museums, architecture, cafes, sightseeing tours--i was thinking barcelona--rome looks pretty expensive, but i'm not ruling it out--i've been to europe, she hasn't so any city for her will be a treat- don't want to spend that much--that's why i have it down to 5 or 6 days--but want to stay in a safe, clean nice place--and yup, she is a lucky lady!!!
