Seafood/Shellfish Allergies and Iceland

Wife and I are anxious to take children to Iceland, but my son has what we think is a pretty bad shellfish/seafood allergy. First exposure to fish wasn't that big of a deal -- benadryl took care of it. His second (accidental) exposure was worse, but nothing really scary. His third -- we were trying a different fish -- was bad enough that we went to an Urgent Care Center out of caution. No treatment was necessary, but he was watched/monitored for about an hour.

We are slightly afraid that the next exposure could be life-threatening. While we have several epi-pens for peanut/tree nut allergies (which are much less severe), I don't relish relying on them when out of the country.

We have no concerns about travelling in the US with his allergy. We avoid obviously unsafe dishes, but don't avoid seafood restaurants if that's what we are in the mood for. When we tell the wait staff, about the allergy they usually reply "No problem."

Curious about how it'll be in Iceland and would appreciate any insights people have to offer.

Has anyone else with a shellfish/seafood allergy traveled to Iceland? Did you run into problems finding safe meals.
Can any Icelandic residents comment on how prevalent this type of allergy is in the country and how accommodating restaurants are?

I would have thought that, given the vast amount of family structural data going back over 1000 years it is highly unlikely that there will be any strain of this allergy in Iceland and that if there was it would be very precisely identified. ( the records are amazing, BTW) and Iceland has one of the few dating APPS that are used to ensure you don't end up horizontal dancing with your cousin.

Restaurants will have no problem not selling you fish and certainly some restaurants are vegetarian (not many) and others specialise in red meats (esp sheep, they call it lamb ;-) ). Your danger is going to be contamination by error.

Do you know if cooking destroys the dangerous chemicals?
