Rochester > Montreal > Quebec Road Trip

My mom (56) and I (30, architect) are planning a trip to fly into Rochester, NY to visit my grandmother at the end of July or beginning of August. I would like to extend the trip by 4-5 days, rent a car and drive up to Montreal and Quebec. We don't necessarily need to make it a straight shot, but I am interested in the most scenic and most fun route. We are interested in culture, shopping, architecture, restaurants, hiking, etc. If you have any recommendations as to what route we should take or things to do along the way, it is much appreciated!

Any chance you could take an Amtrak train to Rochester (Empire Service or Maple Leaf or Lake Shore Limited?
I do not like the idea of taking a rental car over into Canada.
From Rochester my favorite is to take the Amtrak Maple Leaf to Toronto.
Spend at least a day in Toronto and then decide if you want to rent a car there or take a ViaRail train to Quebec.
There is frequent train service between Toronto, Ottawa, Quebec and Montreal. There is also the Amtrak Adirondack that goes south from Montreal through Albany to New York Penn station. Please don't abandon a US rental car in Canada.
