You ought to post in the Italy forum, where you'll find more advice. When are you going?
I think if you are looking to travel in the summer, you can expect to pay no less than $1200. These great deals are for winter and early spring travel. Prices may go back down to around $900 in the fall (October and later), but if you are really expecting to pay $500 this year, I think you're going to be disappointed. The fuel surcharge to Italy can be as much as $200 to $300 depending on the airline. Taxes and fees add on another $100 to $120, depending on the airport.
