that is quite an adventurous trip. I just returned from a trip to Utah and if you decide to not do the grand canyon, zion or Bryce canyon due to weather restrictions I would suggest to check out "the wave" Arizona (6 mile hike)and White Pocket. they are not far from zion. the wave is a permit only hike that is by a lottery system and hard to obtain, but since you are going mid winter your chances are better. white pocket is via a difficult 4WD road, so we took a day tour out of Kanab, Utah to go see this place (google image them). also if you are driving back to las vegas via the I15 I would highly recommend going into valley of fire state park. if you do, give yourself a couple of extra hours. Have fun!!
