Any of the riverwalk hotels are nice. Then you wont need a car. You can take the star shuttle to /from the airport but its cheaper and faster to take a cab if there are 2 people. About $14 each way by cab.

Without a car, you are limited to the downtown area. If you are there for 3 nights, there's only so much that you can do in downtown...
One of my favorite things to do in San Antonio is to see the historic missions that founded the city. You have to have a car for this!
Also, a drive in the Hill Country to Fredricksburg is always a joy. There are so many good places to stop for BBQ, shopping, and beautiful views!

I don't know your price range but you will find hotels on the Riverwalk for $100 and up. I stayed at the historic Menger Hotel a few years ago while I was attending a workshop and really liked the place. It is a very short walking distance to the Riverwalk. There is a wide range of foods to be found in and around the Riverwalk so it might help if you mention what kinds of foods you like. If you want to stay around the Riverwalk no you don't need a car. If you want to leave the immediate area though you would.

For such a momentous occasion, I'd recommend staying at La Mansion del Rio - it's about the prettiest, classiest place on the Riverwalk. The formal restaurant there, Las Canarias is excellent.
Without a car you can stroll the Riverwalk, perhaps hop the trolley to the Mexican market. There are tours if you don't want to drive; check with the concierge.
