The drive between SF and LA is best done w/ a minimum 2 nights/3 days (and 4 days is even better) so there is your 'extra' day. SF to Santa Barbara is one loooooong haul w/ a lot to see in between so not recommended as a 1-day trip.
SF > Carmel (or Monterey or Pacific Grove) for the first night. Then Carmel > Santa Barbara for night two. Third day drive down to LA/LAX.
Even that is a push if you want to explore the state parks/Big Sur, wineries, etc.
